The Limoux area is one of the coolest places in the Languedoc region
in southern France. The grapes are 100% destalked, and vinified with
traditional grape stomping in order to make a soft and gentle fruit
extraction of the tannins. After 20 days of maceration, the wine is then
matured on its fine lies in French oak barrels during 4 months. The
resulting wine has a bright red color with purple hints and an intense
and complex bouquet of red fruit aromas with blueberry notes. The palate
is full-fruit flavored with a long and supple lingering finish
featuring classic cherry fruit with notes of dark chocolate.

2012 Viñedos y Bodegas Pablo Menguante Garnacha, Cariñena, Northern Spain – Regularly $15.99
Menguante means ‘waning moon’. In biodynamic viticulture, the casks
are racked at night only when there is a waning moon, for fear the
gravitational force from a fuller moon will bring the sediment up from
the bottom of the cask. Deep ruby color. Bright raspberry and strawberry
aromas carry into the palate with additional plum flavors. Firm and
round. Soft finish.

The 2012 Menguante Garnacha Selección is sourced from old
vineyards on chalk-rich soils with 10% inclination. The wine aged for
eight months in new French oak barrels. The nose is elegant, showing
aromas of red berries, touches of smoke and spices and Mediterranean
aromatic herbs (thyme, rosemary) and a floral touch that adds elegance
and some complexity. The palate is medium-bodied and harmonious with
very pleasant, round tannins and moderate acidity. Very good value.
